Prepare the ingredients.
Chop the fresh mint leaves.Chop the garlic.
Marinate chicken in oyster, soy sauce and garlic. Add lime juice, zest, and paste. Marinate 15 mins.
Add oil in the pot. Brown chicken with marinade.
Add rice, water and vinegar. Stir well to combine.
Cook under pressure: 7 min.
Garnish with mint.
