  • - 1 tbsp Olive oil
  • - 150 g Peeled thinly sliced leek
  • - 400 g Peeled diced butternut pumpkin
  • - 300 g Arborio rice
  • - 750 ml Vegetable stock
  • - 1/2 cup Grated parmesan cheese
  • - 2 tbsp of Parsley (chopped, to serve)
  • Instructions

    Prepare the ingredients.


    Turn on browning function and add oil.


    Brown leeks and pumpkin for 2 minutes. Add rice and stir to coat.


    Add stock. Stir well to combine.


    Pressure Cooking Time: 6 min.


    Stir through grated parmesan and parsley. Season with salt and pepper to taste.
