Normand Apple Cake

Normandie is famous for its apple orchard and specialties based on apple (cider, compote, calvados etc). The Normandy apple also lends itself perfectly to the preparation of original sweet and savoury dishes, such as duck aiguillettes with caramelized apples, and the tarte tatin of apples with camembert, or more traditional, such as escalope à la normande, whose sauce, composed of cider, Isigny cream, mushrooms and calvados, is a real delight. The Normand Apple cake is a great dessert for a winter afternoon even better served with vanilla ice cream.

    • 125 grams melted butter
    • ½ cup firmly packed brown sugar
    • 1 tsp vanilla extract
    • 2 eggs
    • 1 cup self-raising flour
    • ½ cup plain flour
    • ¾ cup milk
    • 3-4 large royal gala apples, sliced
    • ¼ cup apricot jam and extra brown sugar

    Grease an Ingenio 20cm saucepan and pour 400 mls of water into the Cook4Me+ bowl.

    In a bowl, with a whisk mix together the butter, sugar, vanilla until light and creamy. Add eggs one at a time, beating after each addition.

    Sift flours over butter mixture. Add milk and fold until just combined. Core and quarter apples and thinly slice. Add half the sliced apples to the batter (mix through) and reserve the other half to decorate the cake in a circle on the top.

    Pour batter into the Ingenio 20cm saucepan and arrange remaining apples in a pinwheel fashion on the top. Spread apricot jam over the top with a pastry brush and sprinkle with some brown sugar.

    Cover the Ingenio saucepan with baking paper and foil paper. Secure with an elastic band or string. Place a metal or plastic trivet in the Cook4Me+ bowl. Carefully lower the Ingenio saucepan on top of the trivet. Do not exceed the maximum line in your Cook4Me+ bowl.

    Select Manual, then select Pressure Cook and adjust time to 45 minutes. Close the lid and pressure cook for 45 minutes.

    Once appliance has released pressure and steam, open the lid and allow cake to cool completely inside the appliance. Carefully remove the cake from the Cook4Me+ bowl and remove the baking paper and foil paper. Turn upside down onto a serving dish and accompany with double cream or ice cream.
