  • - 450 g of boneless, skinless chicken breast or thigh meat
  • - 2 tbsp of olive oil
  • - 1 onion, chopped
  • - 2 cloves of garlic, minced
  • - 1 Red capsicum, chopped
  • - 2 chorizo sausage, sliced
  • - 1/2 tsp of saffron
  • - 1 1/2 cup of White rice, long grain
  • - 120 ml of dry white wine
  • - 700 ml of chicken stock
  • - 75 g of Frozen peas

    Prepare the ingredients.

    Chop the onion.Julienne garlic cloves

    Pre-heat the pot and add oil. Season chicken with salt and pepper.

    Add chorizo and rice. Stir well. Add wine, stock and saffron. Stir well to combine.

    Brown chicken for 6 minutes. Cook onion, red pepper and garlic for 2 minutes.

    Pressure Cooking Time: 6 mins.

    Season to taste. Serve with peas.
