Prepare the ingredients.
Pour the oil into pre-heated bowl. Add the spices and the aubergine and brown for 5 mins then add the onion, green beans, raisins and green peas. Season with salt. Cook for 2 min. and set aside in a bowl.
Put the rice in the pan with twice its weight in water. Add the saffron and season with salt.
Cooking time: 5 minutes
Add the cooked vegetables and pistachios and stir to combine. Serve with meat or fish.
