Biryani Rice

A traditional Indian dish that is one of the most flavourful and vibrant rice dishes due to all the herbs and spices! A meal like this that maximises on natural flavour is a great way to reduce your salt intake.

  • - 200 g of basmati rice, rinsed thoroughly in cold water
  • - 1,5 pinches of saffron powder
  • - 3 tbsp of indian spice mix
  • - 20 g of shelled pistachios
  • - 2 tbsp of groundnut oil
  • - 200 g of aubergine(s), washed and cut into small cubes
  • - 1 red onion(s), peeled and chopped
  • - 150 g of green beans, washed and cut into thirds
  • - 100 g of frozen green peas
  • - 40 g of raisins
  • Instructions

    Prepare the ingredients.


    Pour the oil into pre-heated bowl. Add the spices and the aubergine and brown for 5 mins then add the onion, green beans, raisins and green peas. Season with salt. Cook for 2 min. and set aside in a bowl.


    Put the rice in the pan with twice its weight in water. Add the saffron and season with salt.


    Cooking time: 5 minutes


    Add the cooked vegetables and pistachios and stir to combine. Serve with meat or fish.
