Almond & apricot pudding

  • - 2 eggs
  • - 150 g of financier biscuits, crumbled
  • - 50 g of ground almonds
  • - 20 cl of milk
  • - 8 apricots in syrup, cut in halves
  • - Charlotte cake tin with baking paper
  • - 1 tbsp of flaked almonds, toasted for decoration

    Prepare the ingredients.

    In a separate bowl: mix the egg, financier biscuits, ground almonds, milk and apricots.

    Pour the mixture into the tin. Cling film it. Put it into the pan. Pour in 40 cl water.

    Cooking time: 30 minutes

    Keep cool for 8 hours. Turn out.Garnish with flaked almonds.
